Fluffy Scone Recipe

Scone or scone? The question that divides the nation. 

Scones are a classic British treat, best enjoyed just warm, with cream and jam. 

Not quite a cake, but also, not quite a biscuit. Scones are a culinary creation of their own, originating in Scotland. 

The staple ingredients are simple: flour, butter, milk and sugar. But, to achieve a fluffier and lighter texture, we’ll be using yogurt too. 

In this recipe, we’ll be making fluffy scones that are sure to satisfy and impress!

Fluffy Scone Recipe

Fluffy, classic scone recipe that is sure to satisfy and impress
Servings 10 scones (or 12)

Ingredients
  

  • 420 g self-raising flour
  • 220 g yogurt fat free or full fat¼ tsp salt
  • 85 g butter
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 3 tbsp sugar
  • 4 tbsp milk + a little more to glaze

Instructions
 

  • In a bowl, place butter, flour and baking powder - rub the mixture with the tips of your fingers until you have a breadcrumb like texture. Alternatively, place the flour and butter in a food processor and blitz until fine.
  • Next, add in your sugar and combine.
  • In a separate bowl, mix together the yogurt, milk and vanilla extract.
  • Create a well in the centre of the dry mix and pour in the wet mixture to form a dough.
  • Once just combined, wrap and chill the dough in the fridge for 30 mins.
  • While the dough is chilling, preheat the oven to 220C/200C fan.
  • Once the dough has chilled, roll it out and use cutters to form the shape of your scones.
  • Before placing in the oven, brush the tops with milk and bake for around 15 mins, or until golden.
  • Optional, but highly recommended - whip up some cream (clotted cream or double cream) and serve with fresh jelly or jam for a true classic British delight. Best eaten just warm.

Notes

If you want a fluffy scone, it is recommended to chill the dough before baking. Why? Chilling the dough allows the butter to firm up and the dough to relax, resulting in a fluffier and well-structured scone.
This recipe uses homemade hawberry jelly, which is a vibrant and unique addition to the fluffy scones.
Scones require minimal kneading - if you over knead, you risk losing their light and fluffy texture. So, try to handle the dough as little as possible.
Freshly made scones are best enjoyed on the day they’re baked! But, if you plan on having some leftovers, the best way to reheat scones is by placing them in an airfryer or oven for less than 5 minutes. While you can place them in the microwave, this can lead to a chewy and dense scone. So, for a fluffy scone that tastes just like the day you made them, place them in an airfryer. Top tip - cover the tops with foil to avoid them browning too much.
